Winemaking

Choose Your Wine

At Vintage One, we work hand-in-hand with international vine growers to ensure that we are able to provide you with the best quality and priced, premium grapes from around the world. We are currently offering grape varietals from Argentina, Chile, Italy, California and Canada.

A consultation with our winemaker will get you started. Grape selection, blending potential, and oak aging options are just a few of the considerations we’ll cover as part of our premium winemaking process.

Varietals

Blends

Our Blends category wines are made from a combination of juices crushed at the source at top vineyards selected by V1. These wines are blended to ensure consistency and quality. These are young wines and are created to be ready to drink within 6 weeks of ordering.

Cabernet Sauvignon$81/18 litres/24 bottlesA young, nicely balanced easy to drink table wine. Great affordable everyday wine. Serve it proudly to friends or family as part of a weekday meal.
Sauvignon Blanc$81 /18 litres/24 bottlesA light table wine. Great for the everyday. Best consumed young, served with simple meals.
White Zinfandel$126/18 litres/24 bottlesMade with Zinfandel grapes, macerated with the skins for a very short period of time to achieve the rose color. Slightly sweet, making it a bit lower in alcohol content. Hints of summer berries and strawberry on the nose.

Cortes

Our Cortes wines are created with a country-specific choice of fresh juices from V1 selected top vineyards. Our team oversees the harvest and crushing of these grapes which we then import as fresh juice directly to our winery.

Malbec$150/18 litres/24 bottlesA modern, young, fruit-forward red that shows a lively acidity, which makes it a great pair for a BBQ. Good spice and well balanced.
Merlot$171/18 litres/24 bottlesA fruity red wine, best consumed young. Another great wine for the everyday.
Chardonnay$171/18 litres/24 bottlesCrisp and fruity, showing some pineapple and hints of citrus on the nose. The delicate oak gives it a bit more body and complexity, leaving you with a long finish, wanting another sip.
Torrontes$171/18 litres/24 bottlesArgentina’s only native varietal has put Argentina’s whites on the map. Extremely aromatic with floral notes. A favourite amongst lovers of Pinot Grigio and Viognier.

Estates

These wines are produced with high quality grapes from countries and regions our winemakers determine at harvest time. They are single-vineyard varietals and from grapes harvested specifically for V1, from established vineyards with a long-running commitment to quality.
The red wines in our Estates category include a period of oak barrel aging, determined by our winemakers according to each varietal and vintage. Estates wines are best when aged slightly, and only get better with time as they develop more complex and dynamic characteristics.

Nero D’Avola$261/18 litres/24 bottlesThe most important red wine grape in Sicily and one of Italy’s most important indigenous varietals. Nero d’Avola is often treated like Syrah making mostly big red wines with aging potential. It can also be fermented as a lighter style wine for drinking young.
Sangiovese$279/18 litres/24 bottlesA medium body wines with a moderate to high natural acidity. They can range from elegant and firm to very robust and assertive. The finish is usually on the slightly bitter side. Young Sangiovese wines are fruity and spicy, while with maturity they can acquire a distinctive tarry flavor.
Carmenere$279/18 litres/24 bottlesCarmenere had become the “forgotten grape” in Chile for more than 100 years. It was first imported to Chile from Bordeaux in the early 1850’s, and it wasn’t until the early 90’s that a professor discovered that the Chilean Carmenere had been misidentified as Merlot for over a century. Chile’s climate is ideal for the Carmenere grape and it flourished there.
Syrah$279/18 litres/24 bottlesSyrah is the only grape to make the famous Rhone wines of Cote Rotie and Hermitage, and also forms the backbone of most Rhone blends including Chateauneuf de Pape. The origins of this grape were long debated but through combined research, DNA profiling proved Syrah to be indigenous to France. While more than half of the worlds Syrah acreage is planted in France, it is grown with great success in Australia, South Africa, California and Chile.
Malbec$279/18 litres/24 bottlesOne of the traditional Bordeaux varietals, Malbec has characteristics that fall somewhere between Cabernet Sauvignon and Merlot. It can bring ample tannin, deep color and a particular plum-like flavor. Malbec comes to its own in Argentina, where it is the major red varietal planted. Argentine Malbecs are usually softer, with lusher structure, more like New World Merlot, and will age fairly well.
Petit Verdot$234/18 litres/24 bottlesPetit verdot is a red wine grape traditionally grown in France’s Bordeaux valley. The name petit verdot means “little green,” a reference to the difficulties of growing petit verdot grapes in the Bordeaux region. Winegrowers in California and Australia, and Argentina however, have had great success growing petit verdot in their regions’ longer growing seasons.
Organic Tannat$252/18 litres/24 bottlesTannat is historically grown in South West France, and is now one of the most prominent grapes in Uruguay, but is also grown in Argentina with great success. Exceptional levels of polyphenols are found in Tannat. The reason for the high concentration of these properties in Tannat wines are that the Tannat grape contains 5 pips (seeds), while all of the other fine wine grapes normally contain just 2 or 3.
Organic Cabernet Franc$252/18 litres/24 bottlesCabernet franc is a delightful plum colored red wine often distinguished as being “lighter” (in both color and tannins) and “fruiter” than its sauvignon cousin. The specific aromas present in cabernet franc are influenced both by the exact region and production style. Cabernet franc is used in creating ice wine in Canada. Ice wine is a unique dessert wine, highly concentrated and generally quite expensive to produce.
Chardonnay$190/18 litres/24 bottlesThe Chardonnay grape is a delicate, sensitive, diminutive grape. It’s expensive to produce, vulnerable to temperature variations and a veritable chameleon of flavors. It’s a fairy princess with gossamer wings—hard to pin down but easy to recognize, distinctive and special. Chardonnay grapes hail from the Burgundy area of France where their vines are the most numerous of all the varieties planted. They’re the only grape permitted in the Chablis region and the Chardonnay grape is also the major varietal used in making Champagne.
Pinot Grigio$190/18 litres/24 bottlesPinot Grigio is the Italian name for Pinot Gris, a French grape. Although it yields a fruity, dry white wine, Pinot Gris is actually a red grape, with skins ranging in color from bluish gray to brownish pink. It is an “early to market” wine, meaning that it can usually be bottled and sold within four to 12 weeks after fermentation.

Select

Our Select wines are created with grapes from very prestigious, renowned vineyards. Older and more mature, these vineyards typically have a very low yield, resulting in more intense and complex wines. The wines in our Select category include oak barrel aging, determined by our winemakers according to the varietal and vintage. Our Select wines are premium wines, meant to be aged and loved, and exhibiting exceptional characteristics with maturity.

Cabernet Sauvignon$351/18 litres/24 bottlesOrganic Cabernet Sauvignon is the world’s most loved red wine. It is nicknamed “the king of red wine grapes,” and often blended with other reds, including Merlot and Shiraz
On the vine, the Cabernet Sauvignon grape has thick bluish black skin. This thick skin contributes to the grapes notoriously high tannin levels, which soften and smooth with aging. The grape originates from the Bordeaux region of southwest France and is known to be the result of breeding a Cabernet Franc and Sauvignon Blanc grape.
Organic Carmenere$423/18 litres/24 bottlesCarmenere had become the “forgotten grape” in Chile for more than 100 years.
Organic Malbec$405/18 litres/24 bottles/td>

Mendoza is the dominant wine region. Perched on the side of the Andes, this is a region that receives very little rainfall, and were it not for the ready supply of Andes meltwater, viticulture wouldn’t be possible here. Another important factor is altitude: the vineyards here are high up, and with the highest vineyards in the region the extra UV light that the grapes receives causes the grapes to develop thicker skins, with more tannins (and softer tannins, too), as well as more colour. The cooling effect of altitude means that the grapes preserve acidity even when they are allowed to hang for quite a while before harvest.
Chardonnay$297/18 litres/24 bottlesChardonnay grapes are small, think-skinned and fragile and therefore expensive to grow, harvest and age. They require warm climates with cool nights. These grapes come from Casablanca, a valley where the climate is cool, presents morning fog and a wide thermal range between day and night, favoring the slow maturity of the grape.
Fume Blanc$297/18 litres/24 bottlesThis Fume Blanc is from the Santa Filomena vineyard located in the Valley of Casablanca. It is known for its clay soils rich in minerals from the Andean snowmelt, with a cool climate ideal for cultivating white varietals.

Domain

These wines are the most expressive and prestigious of all Vintage One wines. Our Domain wines are highly custom-crafted by our winemakers to the tastes and desires of each individual client.

Each harvest our winemakers commit to finding special vineyards that express the true meaning of terrior – the unique relationship of soil, elevation, climate and topography that impart character and uniqueness on a wine. Along with special vineyards we bring a guest winemaker from a different wine growing region to collaborate with us in crafting our Domain line.

Domain wines are offered by the barrel. These are unique vintages resulting from the collaboration between you and our winemakers. Prices start at $2,800 a barrel.

Sparkling

Sparkling wines are a great way to experience wine in a different way. The carbonation affects the way the flavours reveal themselves in your mouth, allowing you to discover new layers of flavours in traditional varietals like Malbec and Torrontes. The grapes and apples used for our sparkling wine can range from season to season depending on quality and availability.

Torrontes Prosecco$132/9 litres/12 bottlesFine and generous bubbles, well balanced, delicate nose, good acidity. A perfect start to an evening, for festive occasions, or on its own.
Sparkling Apple Cider$108/9 litres/12 bottlesMade from organic Ontario apples using the traditional Normandy method combined with an Argentine style. Traditionally consumed only during the holiday season in Argentina, but Canadians enjoy this cider all year long. Pure taste of fresh apples combined with the finest bubbles, some have called it the “Nectar of the Gods”.
Malbec Rose Frizzante$132/9 litres/12 bottlesElegant on the palate, it has surprising grip and length. Fermented with the skins for a very limited time in order to achieve the beautiful pink tone. You get the fresh fruit, the soft tannins, and the fine bubbles, which allows for a long finish and a refreshing way to start an evening.
