The journey begins in our city winery in the heart of Toronto. Greeted by the expert De Miguel family vintners, you are invited to experience the joy of making fine wine.

1. Choose [Day 1]
   Start the process with a consultation with our winemakers where you choose the grapes for your wine according to your tastes and desires. We offer a wide range of grapes from wine regions around the world, both old and new.
2. Crush
   To extract the essence of the grape – you can participate or you can leave it to us.
3. Ferment [Day 30]
   Send the grapes on the first stage of their journey toward fermentation in temperature-controlled Italian stainless steel fermenting tanks. Designated days each month let our winemakers explain fermentation and show you the progress of your wines.
4. Barrel [Day 60]
   For those wines benefitting from oak aging Vintage One offers a choice of French, American or Hungarian oak barrels. Our winemakers will suggest specific barrels and aging times considering the varietal, the vintage, and your tastes. If you wish, join our winemakers at this stage of production as the wine is filtered, barrel-aged and stabilized. A barrel tasting with our winemakers adds a unique learning opportunity to this stage.
5. Bottle [Day 60 for unoaked wines, Day 180+ for barrel aged wines]
   As the wine takes on its more familiar form, you can call it your own. At the winery we have all the equipment and assistance you need to bottle the final product. We offer a choice of bottle styles, corks and capsules. Choose V1 labels or have our design team create a customized label for your wine. Add a celebration to this final step – throw a bottling party at the winery and invite your friends.
